OK, so with the X-Wing we have a couple of preset poses for it, and the seating configuration is basically that of a real-world dogfighter, but the TIEs have a different setup altogether. Model poses and other still shots where everything associated with the hull and cockpit are little more than props and decoration are one thing, but actually placing the pilot into a flight-ready position is another.
So I'm guessing this here in red are the flight controls, with the lower extensions being the pedals.
And here is what I'm guessing is a base position of V4 in the cockpit, snug as can be. Not bad, fits the seat well, but the controls are well out of reach and the feet aren't on the pedals

Here's hand (sort of) on the stick. That's an awkward position to hold and any more cramming with the figure is going to lead to clipping. Note that the feet are not on the pedals, here
